Glamping

Back From Camping

As usual; good food while camping is a priority. The Primus stove is still going strong, though this trip mandated digging out the faithful, hand-me-down, butane single-burner. Ah the complexities of two vegan meal variants: GF and not. LOL.

The first order of business is, as always, tarps:
Kelty 16' Noah's Tarp (x2) to the rescue.

It has a tendency to rain in the fall, here on the coast. Sadly not enough to lift the fire ban in Juan de Fuca park, this year, though even if it had; I'd preferred it not happen while we were camping for reasons of sogginess. ;)

A typical dinner might be nice stir-fry with smoked tofu, quartered "grape" tomatoes, broccoli, bell pepper and home-made gluten- and sesame-free peanut sauce, over rice:
Admittedly; the rice was boil-in-bag Basmati in this case.

After-dinner relaxation down at the beach, entertaining the camp chocolate Lab, makes for a nice wind-down:
"That stick is here somewhere..."

I don't know if this is the same with all Labs, but this one comes with two settings:

  1. 200%
  2. comatose

Tonnes of fun! Heh.

Finally; there's libations for later in the evening, while relaxing around the propane fire ring. Always a nice touch:
The 47% ended up pairing better with the Knob Creek bourbon, BTW.

There had also been some Taylor Fladgate port, but it didn't make it into the picture. I'll let the reader draw their own conclusions as to what might have happened there...

I'll post the peanut sauce recipe when I get home tonight...

edit: Or; after a week of busy evenings... I'll post it days later ;)
started with this recipe, and ended up here:

  • 1 tsp (dried) ground ginger
  • 1/2 tsp ground dried garlic
  • 3 tbsp lime juice
  • 1 tbsp maple (or agave) syrup
  • 3 tbsp GF tamari
  • 3 tbsp peanut butter
  • 2 tbsp hot water
  • 1/2 teaspoon freshly ground black pepper

Mix like a fiend. Once pasta is cooked al dente, and the veggies are stir-fried to a satisfactory level, add sauce and then rice pasta, mix and heat through. Done.

If your pasta sits for a bit, it's prob good to toss it with olive oil so you don't end up with a sticky white blob :)
